I love mango salsa, its amazing, it truly is. I used to just buy it at a local whole foods store and complain about how expensive it was, until Sabriena told me to just make it myself. Well I knew in that instant she was right, she pointed me in the direction of a recipe on a web site. So I created and looked and recreated until I felt I had the perfect recipe.
You see every persons version of that recipe is different. Its like chocolate chip cookies no one person makes them the same as another. I thought that I had perfected my Mango Salsa that was until I saw the Pioneer Woman‘s version of Mango salsa, you knew she had to go and make it amazing! So she added pineapple! I mean hello why didn’t I think of that? So, I went out and bought everything I would need to make Mango Pineapple Salsa. The thing about Mango Pineapple salsa is you can make it your own, add what you want take out what you don’t enjoy, and that’s the thing, you should enjoy it! So, lets get started:
Ingredients:
- Fresh Mango’s

Fresh Pineapples
-
Cilantro
-
Limes
-
Red Onions
-
Jalapenos
-
Dash of Salt
-
Honey if you need it to be sweeter!
Start by cutting the pineapple and mango into small chunks, followed by chopping the onion up into small pieces and the cilantro. Now the Jalapenos need the seeds to be removed they are after all the hottest part. Once all the prep work has been completed the fun part begins! Toss it all in a bowl and mix it up.
Once its all mixed up go ahead and squirt some lime juice and give it another toss. Then the best part taste it! Now this is the most important part because if it needs to be a little sweeter then go ahead and put a little honey in it.
Now this salsa only gets better as is sits and all the ingredients get to know each other so if you think that it tastes good now wait until the morning, but don’t feel to guilty eating this for breakfast, I mean it has fruit in it, right?

Its hot here really really HOT. I’m sure its hot where you are also and if you are like me you like to keep your home as cool as possible. When dinner time rolls around we usually BBQ on those unbearable days. I have always had issues with what to do for sides when we are grilling and didn’t want to always serve a tired salad. I have a few great side recipes but they call for heating the oven up and that’s just not going to happen this time of year. So I did what any normal person would do and thought outside the box, the aluminum foil box that is!! FOIL PACKETS!! Yes those packets that making camping such a breeze are amazing for sides on the grill. So I whipped up one of my all time favorite ways to eat potatoes made a foil packet and walla sides are a snap!!
Now this potato recipe is the best way to serve up small potatoes. I got this recipe from the girls over at
ourbestbites. I saw this and fainted right on the spot, potatoes smothered with Dijon mustard and rosemary!! Its like they know me, like they read my mind!!! I have made this the way they posted it in the oven and while it makes my house smell delectable, its just to much heat for me right now so I altered it to fit this season. Here is what you will need:
- Small Potatoes
- 3 tablespoons Olive Oil
- 2 Tablespoons Dijon Mustard
- 1 Teaspoon Rosemary (dried or fresh whatever you have on hand)
- Kosher Sat
Take a pot of boiling water and slide those cute little potatoes in, boil for 10 minutes. While that is boiling away whip up the sauce. Drain the potatoes and then toss them into the bowl with the sauce and make sure every single potato is covered. Have your long piece of foil ready and spray it with non stick spray. Once the foil is prepared dump the potatoes on the foil and create a packet. It does not need to be pretty it just needs to keep in the potatoes. Place them on the grill in indirect heat for about 10 minutes. Serve them up with your favorite grilled meat and you have one of the best sides you will ever taste.
Oh if on the off chance you have leftovers they taste super good the next day cold right out of the fridge, not like I would know just guessing!!

The first one to kick this off the right way is Tri-Tip! Who doesn’t enjoy a few slices of grilled Tri-Tip? I know here in Las Vegas its grilling weather, well it really could be December and its grilling weather but there is just something about 107 degree days that scream “PLEASE DO NOT TURN ON THE OVEN!!!” so I listen to that voice and grill!! Alright, back to the Tri Tip, really its such a simple meat that sounds fancy and you can generally find it on sale this time of year so it is a meal that’s not going to break the bank.
To assemble this meal you are going to need the following ingredients:
- 1/4 cup Soy Sauce ( I used the Light kind with great success)
- 1/4 cup Olive Oil
- 2 Tablespoons of Water
- 2 garlic cloves peeled and chopped
- 1.5 lbs Beef Tri Tip cut into 1/2 inch slices
Now The easiest way to marinate this meat is in a gallon zip lock bag. Measure all the ingredients first then throw them in the bag, zip it up and then mix it around with your hands. It really can’t get any easier then this!! Then cut your meat up and slip them into the bag and mash them around until it is fully covered and set in your refrigerator until you are ready to grill. I recommend letting the meat sit for 2-24 hours. I let mine sit for about 8 hours turning every so often to make sure everything was coated all the way!!
Once you are ready to cook the meat just warm up the grill and cook to your liking. I hope that you enjoy this as much as we do!
